Sesame Green Tea Peanut Noodles - YUMMMMMMM!


Today I'm lounging around, and yes, I'm wearing a onesie. I love them, and Santa really delivered this year. So why not make some comfort food...that is one of those dishes that you could really just grab a fork, close the drapes, and eat the whole bowlful by yourself? Enjoy!


Make Your Noodles: Prepare 12 ounces of Chinese egg noodles - bring to a boil in salted water, then turn down to low for about 12 minutes. Drain, and set aside.


Make Your Sauce: In a blender, mix together 1/3 cup creamy peanut butter, 3/4 cup of brewed green tea (I just buy a bottle of it), 1/4 cup soy sauce, 1/4 cup rice vinegar, 3 tablespoons of brown sugar, and 1/4 cup peanut oil. Mix well. Then add to the mix a teaspoon of chili crunch (of course I throw this in everything these days), 2 tablespoons of toasted sesame seeds, a clove of garlic and 1/4 teaspoon salt. Blend until well mixed.


Throw It All Together: Mix the sauce and the noodles well, and also throw in about a cup or so of grated carrots. Let sit in the fridge for at least an hour. To serve, stir well again, and then top with chopped peanuts, sesame seeds, some diced green onions, and some chopped cilantro.


I really dare you to restrain yourself from numerous helpings.
