Some nights when it's just me, and I don't feel like going to town with cooking, I go to my freezer/fridge/pantry and check on my arsenal from my favorite place on Earth - Trader Joe's, and see what I can whip up. Lately, my go to is literally merging two of their unique products together, and it's become my favorite quick and easy meal. I call it Pickle Falafel Salad Bowls!
Trader's carries two pickle-inspired products I love. One is a their Chopped Dill Pickle Salad, which I literally just toss in a bowl as directed. (Yes, it comes with crushed pickle potato chips.)
Next, I cook as directed their frozen Dill Pickle Mini Falafels. You read that correctly...trust me, they are genius! Once cooked, I just scatter those babies on top, and it's literally the best meal like, ever.
