Peanut Butter Berry "Tiramisu"


What's better than any dessert that has peanut butter in it? Why not tiramisu? I apologize in advance to all the tiramisu purists out there - it's one of my favorite desserts - but this is a fun variation. I have made this with strawberries/strawberry jam also, but for today I'm using raspberries. It's a fun, decadent, unique dessert that will surprise your dining guests!


Make Your Peanut Butter Cream: In a stand mixer, combine 1/2 cup of creamy peanut butter, 8 ounces of cream cheese, 1 1/4 cup of powdered sugar, 1/2 heavy cream and one teaspoon of vanilla. Beat until fluffy and smooth - then beat in another 1/2 cup of heavy cream. This peanut butter cream is so good you can put it on anything and be good to go.


Prep the Berry Sauce: Whisk together in a mixing bowl 1/2 cup of raspberry jam, 1/3 cup of either framboise or plain old raspberry juice (depends if you want booze or not), until smooth.


Tiramisu It Up: In a small glass baking dish, start by spreading a few spoonfuls of your berry sauce around the bottom. Cover with a flat layer of soft Ladyfingers Italian cookies (you can find these in your local grocery bakery). Brush these with half of the remaining berry sauce. Spread half of the peanut butter cream over the top, followed by a layer of raspberries (about 2 cups). Then add a second layer of ladyfingers, and brush the tops of these with the remaining berry sauce. Top that with the rest of the peanut butter cream. Cover with plastic wrap, and let sit in the fridge for several hours (like 6 or more, or even overnight). When ready to serve, remove the plastic wrap, add a layer of fresh berries, and dust with powdered sugar.
