In my new Perfect 10 Party Edition cookbook, I highlight seven themes of parties, with a suggested menu and recipes for each. Of course, you can always pull from any of the Top 10 lists for any type of party - but if you're throwing a baby shower, or a book club event, or an afternoon tea party, or even a garden lunch, do your guests a favor and serve up some of my favorite things - Pickle-Craving Finger Sandwiches! This is the recipe for an individual sandwich - so multiply for as many as you want to make.
In a small mixing bowl, combine about a tablespoon of finely diced dill pickles, a tablespoon of mayo, a teaspoon of whole grain mustard, and 1/2 teaspoon of the pickle brine. Mix well to create a thick sauce.
Take two slices of a seedy break, lightly toasted, and spread a layer of the sauce on each piece.
On one of the slices, on top of the sauce, layer a few slices of thinly sliced fresh tarragon leaves and a few leaves of baby spinach. On top of that, add thin slices of dill pickle, creating one full layer of thinly sliced pickle. Cover this with a slice of sharp white cheddar cheese.
Close the sandwiches with the other slice of bread, and then cut diagonally to create cute little finger sandwiches.
