Afternoon Turkey Burger BBQ and Sesame Pasta Salad!


This weekend I had some of my best friends from high school visiting for the weekend - yes, this means pool time and Tim in the Kitchen time - so I made them lovely lemon-tinged Turkey Burgers, along with my Perfect 10 Scrumptious Sesame Pasta Salad... it made for the perfect afternoon bbq menu.


Lemon Tinged Turkey Burgers


This are a fresh, vibrant to make home made turkey patties - with fresh lemon and apple included. They are delicious.


I first saute together about four thinly sliced green onions with three peeled/diced green apples, in olive oil, until softened about five minutes. Let cool.


In a large mixing bowl, I mix two pounds of lean ground turkey, along with the cooled onions/apples, 1 1/2 tablespoons of Kosher salt, one tablespoon of black pepper, 2 teaspoons of hot sauce, juice and zest of one lemon, about a cup of chopped parsley, and 1/4 cup of apricot jam. Mix well, then form into 8 patties. I let them set up in the fridge for a few hours before BBQ'ing.


When ready, I cook them on a well oiled hot grill, about six or seven minutes per side, until cooked thoroughly. Serve on nice brioche buns - I just make a simple tarragon mayo to garnish both halves of the bun...and then also add some crisp potato chips and some shredded lettuce to the burger. Yummmmmm.
