Tonight I had a few friends over for a TV viewing party (okay, it was the Tony Awards). To prep in advance, and make for a fun and stress-free night, I made a platter of mini BLT sandwiches. They were an enormous hit. Since we had some vegetarians in da house, I went with meatless bacon, crisped up in the oven, and they were delish. But you can use whatever your little bacon-obsessed heart desires. These are so easy, and so so good.
Prep Work: I used Campari tomatoes - a pint of them, sliced thin. Put in a small bowl, and toss with 3 teaspoons of red wine vinegar and about 3 tablespoons of olive oil, and large pinches of kosher salt and fresh ground pepper. Mix well, and let sit while you are prepping the rest. Also, crisp up about 12 slices bacon (I like to do so in the oven).
Put Them Together: I used 12 small potato rolls (you can use Hawaiian rolls, slider buns, you name it), and laid open (both halves) on a large cutting board. I put on a layer of aioli (garlic mayo - you can just use regular mayo if you want) on each half. I then drizzle olive oil all of of them, and then sprinkles with salt and pepper. Then a few slices of tomato on the bottom bun, followed by a few leaves of butter lettuce. Lay the bacon (slices broken in small parts) on top, and cover with the top half.
That's it. So easy, and so great!
